Horse racing enthusiasts from around the world will savor a world-class menu of fresh, local and signature culinary offerings during the 2007 Breeders’ Cup World Championships being held at Monmouth Park in New Jersey. ARAMARK, the racetrack’s exclusive food and beverage partner, will serve over 80,000 fans in 21 VIP tented receptions, 75 suites and 5 restaurants, as well as general concessions at the two day event, October 26-27. Led by ARAMARK Executive Chef Ralph Gomez, a six-time Breeders’ Cup culinary veteran, 30 executive chefs and 150 cooks have created a menu to highlight the best of the Jersey shore, as well as cater to the palates of the sophisticated and international fan base expected to attend the prominent year-end Thoroughbred racing championship. The menu will incorporate local, organic and sustainable ingredients and include items such as Monmouth Park’s signature crab cakes, clam chowder and Jersey-grown corn and tomatoes. In the premium areas, fans will find carving stations featuring items such as organic turkey breast with cranberry-orange chutney and mashed sweet potato; charcoal roasted organic grass-fed rib-eye with creamy horseradish and roasted root vegetable ratatouille; and smoked North American fish with autumn risotto. The traditional hamburger and hot dog concession stands will add items including crab cakes, sushi, and tenderloin and gourmet sandwiches. “We are extremely excited to play an important role in enhancing the fan experience at one of horse racing’s most prestigious events,” said Carlos Avila, ARAMARK General Manager at Monmouth Park. “We look forward to showcasing our culinary expertise to an expected record-crowd at Monmouth Park and on an international stage.” To staff this high-profile, international sporting event, ARAMARK will also have 75 managers from across the country on-site to oversee a staff of 1,000 employees. In addition, ARAMARK has worked closely with track and race officials to renovate and upgrade the existing food and beverage facilities, construct four portable kitchens and add six on-site refrigerator/freezer trucks to manage the increased food and beverage quantities.
